You encrypt with keys only you hold. The relays that store your work only ever see ciphertext — they couldn't read it if they tried, and neither can we.
And you can check it yourself: the encryption is open source and runs on your device, so security here is something you prove, not something you're promised. The only kind of security that's actually real.
